Ingredients/Components

  • salt and pepper to taste - 1 item
  • mayonnaise - 2 3
  • can cream of celery soup - 1 item
  • carrots, sliced - 1 lb
  • Cheddar cheese, shredded - 1 lb
  • diced celery optional - 1/4 c
  • head broccoli angular cuts - 1 item
  • head cauliflower angular cuts - 1 item
  • diced fresh onion optional - 2 Tbsp

How to make vegetable casserole:

Toss carrots, broccoli and cauliflower. Mix together celery soup, mayonnaise, Cheddar cheese, diced celery, fresh onion, salt and pepper. Mix all together. Spread out into a 9 x 13-inch pan. Top with 2 tablespoons melted butter mixed with 1/2 cup seasoned bread crumbs. Sprinkle Parmesan cheese over this. Bake at 350° for 30 to 35 minutes or until vegetables are just tender.
