Twice baked sweet potatoes
Ingredients/Components
- salt - 1/2 tsp
- chopped walnuts - 1/2 c
- margarine - 1/4 c
- ground cinnamon - 1/2 tsp
- ground nutmeg - 1/4 tsp
- mini marshmallows - 3 c
- can pineapple, crushed - 1 oz
- large sweet potatoes, baked - 6 item
How to make twice baked sweet potatoes:
Cut each potato in 1/2 lengthwise. Scoop out centers, leaving 1/2 inch shell. Mash potatoes. Add 2 tablespoons margarine, cinnamon, salt and nutmeg. Mix until smooth. Gradually add pineapple; beat until fluffy. Stir in 2 cups marshmallows and nuts.Recipe categories: Side dish, Potato, Yam/sweet potato.
