Twice baked bacon and cheese potatoes
Ingredients/Components
- large potatoes - 2 item
- pieces bacon, fried crisp - 6 item
- sour cream - 1/2 c
- margarine - 1 Tbsp
- salt and pepper to taste - 1 item
- Cheddar/Mozzarella cheese - 3/4 c
How to make twice baked bacon and cheese potatoes:
Bake potatoes, cut in half lengthwise, scoop out pulp and place in bowl. Smash pulp and mix in margarine, sour cream, crumbled bacon, salt and pepper and 1/2 cup cheese. Spoon mixture into potato skins and arrange in baking dish. Sprinkle 1/4 cup cheese over top of potatoes. Bake at 350° for 20 to 25 minutes. Serves 4.Recipe categories: Weeknight, Potato, Vegetables.
