Ingredients/Components

  • eggs - 2 item
  • butter - 4 Tbsp
  • dash of salt - 1 item
  • whipping cream - 4 Tbsp
  • chopped onion - 2 Tbsp
  • dash of pepper - 1 item
  • baking potatoes - 4 item
  • bacon, crisp - 2 Tbsp
  • shredded Cheddar cheese or Monterey Jack cheese - 3/4 c

How to make twice baked potato:

Rinse and scrub potatoes. Pat dry. Bake at 375° for 1 hour. Cut a thin slice off the top of each potato. Carefully scoop out the pulp. Put in a bowl. Separate eggs. Add yolk to potato pulp. Stir and blend until smooth. Add butter, cream, onion, bacon, salt and pepper.

Beat egg whites until stiff peaks form. Fold into potato mixture. Fill potato shells with mixture. Sprinkle with cheese. Bake at 375° for 15 minutes.
