Ingredients/Components

  • lemon juice
  • bay leaf - 1 item
  • salt and pepper - 1 item
  • sherry - 1/3 c
  • beef stock - 2 qt
  • drops Tabasco sauce - 3 item
  • fresh turtle meat, diced
  • clove mace - 1 item
  • hard-cooked egg white, diced - 1 item

How to make turtle soup:

Combine turtle meat, beef stock, bay leaf, mace, lemon juice and Tabasco sauce. Bring to boiling and cook until turtle meat is tender. Remove bay leaf and mace. Add egg white and season with salt and pepper. Add sherry after removing soup from heat.
