Sweet gherkins
Ingredients/Components
- about 7 lb - 5 qt
- salt - 1/2 c
- turmeric - 3/4 tsp
- celery seed - 2 tsp
- mixed pickling spice - 2 tsp
- 1-inch pieces stick cinnamon - 8 item
- fennel optional - 1/2 tsp
- vinegar - 6 c
- honey - 4 c
- vanilla optional - 2 tsp
How to make sweet gherkins:
First Day: Wash cucumbers thoroughly and drain. Place in large container and cover with boiling water. Six to 8 hours later, drain and cover with fresh boiling water.Second Day: Drain and cover with fresh boiling water. Several hours later, drain and add salt and cover with fresh boiling water.
Third Day: Drain. Prick cucumbers in several places with fork. Add turmeric and spices to 3 cups vinegar and bring to boil. Add 1 1/2 cups honey. Pour over cucumbers. A few hours later, drain syrup into pan and add 2 cups vinegar. Bring to boil. Add 1 cup honey. Pour syrup over pickles.
Fourth Day: Drain syrup into pan and add 1/2 cup vinegar to syrup. Heat to boiling. Add 1 cup honey and pour over pickles. Later drain syrup into pan. Add remaining 1/2 cup vinegar and 1/2 cup honey, plus vanilla, if you're using it. Bring to quick boil. Pack pickles into clean, hot pint jars. Cover with boiling syrup, leaving 1/4-inch head space. Adjust seals and process for 5 minutes in boiling water bath. Yields 7 pints.
