Sweet gherkins
Ingredients/Components
- sugar - 7 c
- salt - 1/2 c
- vinegar - 6 c
- celery seed - 2 tsp
- turmeric - 3/4 tsp
- mixed spices - 2 tsp
- cucumbers, 1 1/2 to 3 inches long - 5 qt
How to make sweet gherkins:
First day: Cover all cucumbers with boiling water.Second day: Drain, cover with fresh boiling water, add 1/2 cup salt.
Third day: Drain. Prick cucumbers with fork. Make syrup of 3 cups of sugar and 3 cups vinegar. Add 3/4 teaspoon turmeric and 2 teaspoons celery seed and 2 teaspoons mixed spices, heating to boiling and pour over cucumbers. In afternoon, drain syrup. Add 2 cups sugar and 2 cups vinegar. Heat to boil and pour over pickles.
Fourth day: Drain syrup into pan. Add 2 cups sugar and 1 cup vinegar. Heat and pour over pickles. Pack into jars.
