Ingredients/Components

  • top sirloin steak, cut into 1 x 1 x 1/4-inch cubes - 1/2 lb
  • slices ginger 1/4-inch thick - 2 item
  • broccoli, cut diagonally 1/4-inch thick cut off flowerets and remove skin from stalk before cutting - 1/2 lb
  • cloves garlic, minced - 2 item
  • chicken stock - 3/4 c
  • can water chestnuts, sliced - 1 item
  • cornstarch
  • oyster sauce - 2 tsp
  • sherry wine - 2 tsp
  • soy sauce - 2 Tbsp
  • salt
  • sugar - 2 tsp
  • a little water - 1 item

How to make beef and broccoli:

Marinade:2 Tbsp. cornstarch2 tsp. oyster sauce2 tsp. sherry wine2 Tbsp. soy sauce Seasonings:1/2 tsp. salt2 tsp. sugar2 tsp. soy sauce Thickening:2 Tbsp. cornstarch a little water Have the meat prepared into pieces. Marinate for 15 minutes in the marinade mixture. Prepare the ginger, broccoli, garlic, chicken stock and the water chestnuts. Add a little water to the cornstarch to make a paste.

In your preheated wok, add 3 tablespoons peanut oil. Heat wok again; add beef. Stir and brown rapidly (1 minute); remove and place aside. Beef should be pink in the center. In the same wok, bring to boil chicken stock, then add broccoli. Cover and cook for 3 minutes. Add seasonings and chestnuts. Make sure stock is boiling again, then add thickener. Mix thoroughly. Add meat when gravy thickens. Remove to your serving dish. Serve with rice. Makes 2 servings.

Note: The garlic and ginger are added to hot oil before cooking meat, then removed.
