Sweet and sour meatballs
Ingredients/Components
- ground beef - 2 lb
- egg, beaten - 1 item
- salt - 2 tsp
- powdered garlic - 1/4 tsp
- dry bread crumbs - 1/2 c
- butter - 3 Tbsp
- pineapple juice
- can pineapple chunks 2 cups - 1 item
- vinegar - 1/3 c
- sugar - 6 Tbsp
- soy sauce - 1 Tbsp
- cornstarch - 3 Tbsp
- water - 1/3 c
- green pepper, cut in strips - 1 item
- tomatoes, cut in wedges - 4 item
How to make sweet and sour meatballs:
Sauce:1 c. pineapple juice1 can pineapple chunks (2 cups)1/3 c. vinegar6 Tbsp. sugar1 Tbsp. soy sauce3 Tbsp. cornstarch1/3 c. water1 green pepper, cut in strips4 tomatoes, cut in wedges Mix ingredients for meatballs and make into walnut size balls.Brown meatballs in butter, in large heavy skillet. Add next 5 ingredients and heat. Combine cornstarch and water and blend with mixture in the skillet, tipping pan to mix evenly. Cook until thickened.
Just before serving add peppers (you want them crisp). Simmer 5-10 minutes. At last minute add tomato wedges. Serve on hot rice. Makes 8 servings.
