Ingredients/Components
- red pepper flakes - 1 Tbsp
- liquid smoke - 3 4
- mustard seed - 1 Tbsp
- coarse black pepper - 1 tsp
- Morton Tender Quick salt - 1/4 c
- ground meat cheap - 5 lb
How to make summer sausage:
Mix seasonings an meat until "mushy." Cover and refrigerate 24 hours. Remove from refrigerator and shape meat mixture into 4 loaves approximately 2 1/2 inches in diameter and 9 inches long. Be sure to compress the loaves to get all the air out. Bake in roaster pan on drip rack for 4 hours at 225°. After 2 hours, turn loaves over. Let cool.
