Stuffed artichokes
Ingredients/Components
- medium onion, chopped fine - 1 item
- salt to taste - 1 item
- fresh ground pepper - 1/4 tsp
- sliced celery - 1 c
- white cooking wine - 1 c
- Italian bread crumbs - 3 c
- fresh chopped parsley - 1 c
- virgin olive oil - 1/2 c
- Parmesan cheese, freshly grated - 1/2 c
- large artichokes - 4 item
- large cloves garlic, chopped fine - 2 item
- Romano cheese, freshly grated - 1/4 c
- large shallot, chopped fine - 1 item
How to make stuffed artichokes:
Add olive oil to large heated pan. Add garlic, shallot, onion, parsley and celery. Saute until celery is almost tender. Remove from heat. Add bread crumbs, Parmesan cheese, Romano cheese, pepper and salt. Mix. Olive oil may be added if too dry.Cut artichoke stem and tips. Remove center portion to the heart. Stuff center and in between leaves. Repeat with each artichoke. Stand upright in large saucepan containing 1-inch of water and white cooking wine. Cook with tight lid for 50 minutes or until leaves are easily removed. Serves 4.
