Ingredients/Components

  • sugar - 4 c
  • salt - 4 Tbsp
  • cornstarch - 2 Tbsp
  • water - 1/2 c
  • vinegar
  • celery seed - 1 tsp
  • onion - 4 c
  • mustard seed - 1 tsp
  • turmeric - 1 tsp
  • large hot peppers - 2 item
  • chopped squash - 10 c
  • large bell peppers 1 green, 1 yellow, 1 red - 3 item

How to make squash relish:

You will need jars and seals.

Mix squash and onions. Put salt over them; let set overnight in refrigerator, then rinse off and drain. Add the next 7 ingredients; let simmer for 30 minutes. Add 1/2 cup water and cornstarch; let boil for 5 minutes. Put into hot jars and seal tight. Yields 8 pints.
