Squash relish
Ingredients/Components
- sugar - 4 c
- salt - 4 Tbsp
- cornstarch - 2 Tbsp
- water - 1/2 c
- vinegar
- celery seed - 1 tsp
- onion - 4 c
- mustard seed - 1 tsp
- turmeric - 1 tsp
- large hot peppers - 2 item
- chopped squash - 10 c
- large bell peppers 1 green, 1 yellow, 1 red - 3 item
How to make squash relish:
You will need jars and seals.Mix squash and onions. Put salt over them; let set overnight in refrigerator, then rinse off and drain. Add the next 7 ingredients; let simmer for 30 minutes. Add 1/2 cup water and cornstarch; let boil for 5 minutes. Put into hot jars and seal tight. Yields 8 pints.
