Squash fritters
Ingredients/Components
- flour
- baking powder
- sugar - 1/2 tsp
- salt - 1 tsp
- sour cream - 1/2 c
- egg - 1 item
- vegetable oil - 1 Tbsp
- coarsely grated yellow squash or zucchini - 3 c
- medium onion, grated - 1 item
- pepper to taste - 1 item
- oil for frying - 1 item
How to make squash fritters:
Combine first 7 ingredients, beating until smooth. Stir in squash and onion. Add pepper. Drop mixture by tablespoon into a hot greased skillet, cooking until golden brown (as for pancakes). Drain on paper towel. Makes about 2 dozen.Recipe categories: Eggs/dairy, Squash, Side dish.
