Ingredients/Components
- to 10 yellow squash, cooked, drained and smashed - 8 item
- chopped onion - 1 item
- chopped bell pepper - 1 item
- jar pimentos - 1 item
- to 1 chopped jalapeno optional - 1/2 item
- salt and pepper - 1 item
- garlic salt - 1 item
- eggs, slightly beaten - 2 item
- Velveeta cheese, grated
- Pepperidge Farm herb stuffing crumbs
How to make squash casserole:
Cook onion and bell pepper in small amount of oil until onion is clear, then mix all ingredients together (reserve 1 cup stuffing crumbs and enough cheese for top). Pour into casserole dish. Put cheese on first and top with crumbs. Bake at 350° for 20 to 30 minutes.Recipe categories: Squash, Side dish, Casseroles.
