Split pea soup
Ingredients/Components
- cold water - 3 qt
- large onion, minced - 1 item
- dried split peas - 2 c
- stalks celery, chopped fine - 3 item
- sprig parsley - 1 item
- ham bone or small shank end of ham - 1 item
How to make split pea soup:
Cover peas with water and soak overnight. Add rest of ingredients and bring slowly to boiling point. Cover and simmer 4 to 5 hours until peas are tender and the liquid partially cooked down. For smooth soup, rub peas through a coarse sieve. Skim off excess fat. Thicken, if desired, with 3 tablespoons butter and 3 tablespoons flour. Dilute as desired with additional milk or water. Season to taste with salt and pepper. Makes 8 servings. Also good with dried beans.Recipe categories: < 4 hours, Soups & stews, 3 steps or less.
