  • milk - 1 c
  • salt - 3/4 tsp
  • soda - 1/2 tsp
  • eggs, beaten - 2 item
  • ground meat - 1 lb
  • large onion, finely chopped - 1 item
  • can cream-style corn - 1 item
  • yellow corn meal
  • bacon drippings - 1/2 c
  • jalapeno peppers, chopped - 4 item
  • grated Colby cheese - 1/2 lb

How to make mexican corn bread:

Corn Bread Mixture:1 c. yellow corn meal1 c. milk1/2 tsp. soda1/2 c. bacon drippings2 eggs, beaten1 can cream-style corn3/4 tsp. salt Saute ground meat; drain. Prepare and set aside the onion, cheese and jalapeno peppers.

Corn Bread Mixture: Combine ingredients. Grease a large pan; heat it well. Sprinkle a thin layer of cooked meat in the pan; let it heat. Pour 1/2 of batter over meat. Sprinkle peppers on top. Pour remaining batter over mixture. Bake in a 350° oven for 45 to 50 minutes.
