  • split peas, washed - 3 lb
  • ham base - 1/4 c
  • carrots, finely diced - 2 item
  • onion, finely diced - 1 item
  • roux flour and oil paste - 1 item
  • diced, cooked ham optional - 2 c

How to make split pea soup:

In a large pot, cover peas with water almost to top of pot. Cook on medium approximately 1 1/2 hours. Test for softness. Peas must be soft enough to mash. Add 1/4 cup ham base and mash. Thicken with roux.

In separate pan, cook carrots and onion until tender. Add to soup pot. Serve with oyster crackers or 7 grain bread.
