Spinach with rice
Ingredients/Components
- water - 1 c
- clove garlic, minced - 1 item
- salt and pepper to taste - 1 item
- olive oil - 1/2 c
- Feta cheese - 1/2 c
- tomato sauce - 4 oz
- rice - 1 c
- bunch green onions, chopped - 1 item
- sprigs parsley, chopped - 2 item
- fresh spinach or 2 10 oz - 2 lb
- chopped dill weed - 2 Tbsp
How to make spinach with rice:
Wash spinach and drain. Saute onions in oil until soft. Add all other ingredients, except rice and cheese. Cook until spinach is wilted. Add rice. Cover and simmer until rice is tender. Remove from heat and add Feta cheese, if desired. Do not stir. Yields 4 to 6 servings.Recipe categories: Side dish, Spinach, Greens.
