Southwestern corn soup
Ingredients/Components
- butter - 4 Tbsp
- clove garlic, minced - 1 item
- cans chicken broth - 3 item
- onion, chopped - 1/2 c
- white pepper - 1/2 tsp
- celery, chopped - 1/2 c
- carrots, chopped - 1/2 c
- cumin - 1 2
- slivered toasted almonds - 3/4 c
- corn kernels frozen - 3 c
How to make southwestern corn soup:
Melt butter and saute carrots, onion and celery until tender. Add garlic and cumin; heat 1 minute. Add broth, pepper and corn. Simmer 20 to 25 minutes. Add almonds. Process in blender or food processor. Garnish with sour cream, Cheddar cheese, cilantro and green onion.
