- Add spices and enough water to cover turkey completely
How to make smoked turkey:
Place turkey in 5 gallon bucket. Add spices and enough water to cover turkey completely. Marinate for 5 days (keep cool; add ice cubes if necessary). Wrap in foil with small hole at each end. Smoke over very low fire (keep temperature under 200°) for 16 hours. Remove foil and glaze with:Glaze:1 c. honey2 tsp. mustard1 tsp. ginger Brush on glaze; smoke an additional 1 to 2 hours until golden brown.Recipe categories: Main dish, Turkey, Whole turkey.
