Ingredients/Components

  • sugar - 1/2 c
  • salt - 3/4 c
  • water - 1 gal
  • cloves - 3 item
  • peppercorns - 8 item
  • bay leaves - 3 item
  • coriander seed - 3 item
  • turkey when larger turkey is used, increase ingredients - 12 lb

How to make smoked turkey:

You will also need charcoal.

Into a container large enough to submerge turkey, add sugar, salt and water. Stir vigorously until sugar and salt are dissolved. Grind spices in blender and add to water solution. Add turkey to this brine. Brine should completely cover the turkey. Cover container. Place in refrigerator and allow to "cure" for 2 to 4 days. Turn turkey at least twice during the "curing."

Remove from brine and drain thoroughly. Place on rack in shallow pan. Place grill over hot coals. Cover grill to keep smoke in. Add charcoal to fire as needed. Cook at least 2 hours or until turkey is done.
