Ingredients/Components

  • milk - 2 c
  • salt - 1 tsp
  • flour - 2 Tbsp
  • butter - 1/4 lb
  • nutmeg - 1/4 tsp
  • heavy cream
  • chopped parsley - 1 tsp
  • chopped scallions - 1/3 c
  • red pepper - 1/4 tsp
  • crab meat - 4 c
  • dry sherry optional - 3 4

How to make she-crab soup:

Melt butter; then add flour, salt, red pepper, parsley and nutmeg. Cook for 1 minute and then add milk. Stir and cook until thick. Add crab meat. May be held at this point. When ready to serve, stir in heated cream and sherry. Serves 4.

You can substitute the heavy cream with 1 pint half and half and 1/2 to 1 pint of whipping cream, lightly whipped.
