Ingredients/Components

  • eggs - 3 item
  • milk
  • salt - 1/2 tsp
  • flour - 1 c
  • butter - 1/2 c
  • nutmeg - 1/2 tsp
  • cooking oil - 2 3
  • chicken broth - 4 6
  • salt and pepper - 1 item
  • chopped parsley - 1 Tbsp
  • large onion, diced - 1 item
  • carrots, diced - 2 item
  • stalk celery, diced - 1/2 item
  • bay leaves - 2 item
  • celery salt - 1 tsp
  • pearl barley - 1 c
  • meat from 1 chicken, cooked and shredded
  • fresh cut green beans - 1 c

How to make chicken dumpling soup:

Dumplings:1 c. milk1/2 c. butter1/2 tsp. salt1/2 tsp. nutmeg1 c. flour3 eggs In cooking oil, sweat onion, carrots and celery. Add broth, chicken, beans, barley, celery salt, parsley and bay leaves. Simmer until barely is tender, about 30 minutes.

Make Dumplings: Bring milk and butter to a boil; add salt and nutmeg. Remove from heat and immediately add flour, stirring until dough leaves side of pan. Incorporate the eggs 1 at a time, forming a sticky dough. Season soup to taste with salt and pepper. Add spoon sized balls of dumpling dough and simmer until dumplings rise.
