She-crab soup
Ingredients/Components
- milk - 1 pt
- stick butter - 1/2 item
- cream - 1 pt
- cracker crumbs - 1/2 c
- salt to taste - 1 item
- grated onion - 1/8 item
- white pepper - 1/8 tsp
- sherry - 2 tsp
- crab meat - 2 c
- mace - 1/8 tsp
- crab roe or 1 chopped egg yolk - 1/4 c
How to make she-crab soup:
Mix milk with mace. Simmer a few minutes. Add crab, roe, butter and cream; cook 15 minutes. Thicken with cracker crumbs. Season with salt, pepper and onion. Add sherry just before serving.Recipe categories: Soups & stews, Bisques/cream soups, Crab.
