Sauerkraut balls
Ingredients/Components
- eggs - 2 item
- flour - 1 item
- vegetable oil - 1 item
- 8 oz - 1 pkg
- pepper - 1/4 tsp
- garlic salt - 1/4 tsp
- chopped onion - 1/2 c
- chopped fresh parsley - 1/4 c
- bread crumbs - 1 item
- dry bread crumbs - 1/4 c
- sausage - 1 lb
- sauerkraut - 1 can
- sweet and spicy mustard - 2 Tbsp
How to make sauerkraut balls:
Fry sausage and onions, breaking sausage into small pieces, until brown. Drain. Drain sauerkraut and squeeze dry. Add to sausage mixture with 1/4 cup bread crumbs, cream cheese, parsley, mustard, salt and pepper. Mix well and chill overnight. Place flour for coating balls in a pie plate. Place eggs and 2 tablespoons water in shallow bowl, beating lightly to combine.Place bread crumbs in second bowl. Shape sausage mixture into small balls, roll in flour, then in bread crumbs. Fry balls a few at a time, in oil heated to 375° until brown. Drain on paper towels. Place on baking sheet with sides and bake at 375° for 15 to 20 minutes. Makes 4 1/2 to 5 dozen balls.
