Salad nicoise
Ingredients/Components
- salt - 1 tsp
- oil
- lemon juice - 1 tsp
- dry mustard - 3/4 tsp
- paprika - 1/4 tsp
- basil - 1 tsp
- tomatoes, chopped - 2 item
- clove garlic, crushed - 1 item
- tarragon vinegar - 1/4 c
- red potatoes - 3 lb
- whole string beans - 1 lb
- red or white onion, sliced - 1/2 item
- pepperoni, capers, sliced black or green olives optional - 1 item
How to make salad nicoise:
Dressing:3/4 c. oil1/4 c. tarragon vinegar1 tsp. lemon juice1 tsp. salt1/4 tsp. paprika3/4 tsp. dry mustard1 clove garlic, crushed1 tsp. basil Cube and boil potatoes, leaving skin on. (Add 1 tablespoon vinegar to water to prevent mushiness.) Boil beans. Let cool.Combine all ingredients. Whisk dressing ingredients together and pour over potato mixture.
