Ingredients/Components
- cider vinegar - 2 Tbsp
- lemon juice - 3 Tbsp
- dry mustard - 1/2 tsp
- low-fat cottage cheese - 1 c
- sliced green onion - 1/2 c
- skim milk - 3/4 c
- chopped celery - 1 c
- chopped parsley - 3 tsp
- white pepper - 1/2 tsp
- celery seed - 1/2 tsp
- dill weed - 1/2 tsp
- potatoes 6 large - 3 lb
How to make garden potato salad:
Scrub potatoes; boil in jackets until tender. Cool and peel. Cut into 1/2-inch cubes. Add celery, green onion and parsley.Meanwhile, in a bowl, blend cottage cheese, milk, lemon juice, vinegar, celery, dill weed, dry mustard and white pepper until smooth. Chill for 1 hour.
Pour chilled cottage cheese mixture over vegetables; mix well. Chill 30 minutes before serving.
