Salad nicoise
Ingredients/Components
- clove garlic - 1 item
- medium new red potatoes - 6 item
- chilled cooked young green beans - 3 c
- peeled and quartered tomatoes, which have been marinated in French dressing - 6 item
- heated white wine or 1/2 c - 1/2 c
- capers, anchovies and black olives* - 1 item
How to make salad nicoise:
*Tuna fish may be substituted for anchovies.Cook potatoes in water with clove of garlic; peel and slice. While warm, sprinkle with heated wine. Let stand at room temperature for 1 hour. To serve, mound potatoes in the center of a platter of salad greens. Garnish potatoes with capers, black olives and tuna or anchovy fillets. Alternate the tomato quarters and small heaps of beans around the potatoes.
