Rice pilaf
Ingredients/Components
- butter - 1 Tbsp
- long grain rice - 1 c
- olive oil - 2 Tbsp
- small onion, finely chopped - 1 item
- minced parsley - 2 Tbsp
- chicken stock
- salt may be omitted - 1/4 tsp
- pine nuts or blanched almonds - 1/2 c
How to make rice pilaf:
In medium skillet, lightly brown rice, onion and nuts in butter and oil over moderate heat. Stir often to ensure an even color. Add stock and salt. Cook, covered, over low heat for about 20 minutes, until rice has absorbed liquid. Toss with minced parsley.Recipe categories: Side dish, Rice, Long Grain rice.
