- eggs - 2 item
- saltine crackers - 1/4 lb
- uncooked eggplant - 2 qt
How to make eggplant fritters:
Peel and cook eggplant; drain and let cool. Mix eggs and crackers to thick consistency. Pat into desired cakes and fry in Crisco or Wesson oil for 5 minutes. Salt and pepper to taste.Recipe categories: Squash, Side dish, Vegetables.
