Ingredients/Components

  • vanilla - 1/2 tsp
  • salt - 1 tsp
  • chopped nuts - 1/2 c
  • flour
  • brown sugar
  • soda - 1 tsp
  • vegetable oil - 2/3 c
  • egg - 1 item
  • sour milk* - 1 c
  • chopped rhubarb - 2 c

How to make rhubarb bread:

Sift dry ingredients together. Beat wet ingredients. Blend dry ingredients into wet ingredients. Add rhubarb and nuts. Pour into 2 greased and floured pans and top with brown sugar and butter. Bake in preheated oven at 325° for 45-60 minutes.

Applesauce can be substituted for oil. (Less fat.)

*Sour milk is 1 Tbsp. lemon juice or vinegar and milk.
