Ingredients/Components
- salt - 1/2 tsp
- oil - 1/3 c
- pepper - 1/4 tsp
- clove garlic, finely chopped - 1 item
- medium onion, sliced - 1 item
- V-8 or tomato juice - 1/4 c
- medium zucchini, cut in 1/2-inch slices - 1 item
- small green pepper 1/2-inch slices - 1 item
- small eggplant, peeled and cut into 3/4-inch pieces - 1 item
- medium tomatoes, cut in 1/8ths - 2 item
- each: basil and parsley flakes - 1 tsp
How to make ratatouille:
In 3-quart casserole, combine onion, green pepper, oil and garlic. Cover with lid. Cook at High 4 minutes. Stir. Add remaining ingredients; stir. Cover. Cook at High for 18 to 20 minutes. Stir twice. Let stand, covered, 5 minutes before serving.Recipe categories: Eggs/dairy, Cheese, Main dish.
