Raisin nut bread
Ingredients/Components
- sugar - 1/2 c
- milk
- salt - 2 tsp
- shortening - 1/2 c
- chopped walnuts - 1 c
- raisins - 1 c
- sifted all-purpose flour - 6 6
- active dry yeast - 1 pkg
How to make raisin nut bread:
In mixer bowl, combine 3 cups of the flour and the yeast. In saucepan, heat together milk, sugar, shortening and salt just until warm, stirring occasionally, to melt shortening. Add to dry ingredients in mixer bowl. Beat at low speed of electric mixer for 1/2 minute, scraping sides of bowl constantly. Beat 3 minutes at high speed.By hand, stir in raisins, nuts and enough of the remaining flour to make a moderately stiff dough. Turn out on lightly floured surface; knead until smooth, about 5 minutes. Place in greased bowl, turning once to grease surface. Cover; let rise until double, about 1 1/4 hours. Punch down; divide dough in half. Cover and let rest 10 minutes. Shape in 2 loaves. Place in 2 greased 9 x 5 x 3-inch loaf pans. Cover and let rise until double, about 1 hour. Bake in 375° oven for 35 to 40 minutes. Remove from pans; cool. Frost with confectioners sugar icing. Makes 2 loaves.
