Refrigerator whole wheat rolls
Ingredients/Components
- sugar - 1 c
- milk
- salt - 1 Tbsp
- eggs, beaten - 2 item
- shortening - 3 Tbsp
- warm water - 1/2 c
- sifted all-purpose flour - 3 c
- whole wheat flour - 4 4
- active dry yeast - 2 pkg
How to make refrigerator whole wheat rolls:
Scald milk. Add sugar, salt and shortening. Cool to lukewarm. Sprinkle yeast on warm water; stir to dissolve. Combine milk mixture, 1 cup whole wheat flour and 1 cup all-purpose flour. Beat well with electric mixer at medium speed, scraping the bowl occasionally, about 2 minutes. Add yeast mixture and eggs and beat well. Stir in enough remaining flours, a little at a time, to make a soft dough that leaves the sides of the bowl.Place in greased bowl and turn to grease top. Cover and place in refrigerator (dough will keep in refrigerator about 3 days). Remove from refrigerator about 2 hours before you wish to serve rolls. Turn dough onto floured board and knead lightly a few times. Shape as desired and place in greased pans or on baking sheets. Cover and let rise in warm place until doubled, 1 to 1 1/2 hours. Bake in hot oven at 400° for 15 to 20 minutes. Brush with melted butter.
