Mexican corn bread
Ingredients/Components
- salt - 3/4 tsp
- soda - 1/2 tsp
- eggs, well beaten - 2 item
- bacon drippings - 1/4 c
- sweet milk - 1 c
- 303 can cream-style corn
- yellow meal - 1 c
How to make mexican corn bread:
Mix all dry ingredients. Add the milk and set aside. Saute 1/2 pound ground meat until brown. The next 3 ingredients are prepared ahead to be ready to be used: 1 large onion, finely chopped, 1/2 pound cheese and 4 jalapeno peppers, chopped fine (fresh or canned).Grease large skillet. Pour in 1/2 batter, cheese, meat and peppers. Add rest of batter. Bake at 350° for 45 to 50 minutes.
