Ingredients/Components

  • sugar - 1/3 c
  • milk - 2/3 c
  • salt - 1 tsp
  • nutmeg - 1/4 tsp
  • eggs, beaten - 2 item
  • shortening - 1/2 c
  • unsifted flour
  • warm water 105~ to 115~ - 1/2 c
  • dark seedless raisins
  • active dry or cake yeast - 2 pkg

How to make raisin bread:

Scald milk; add sugar, salt and shortening. Cool to lukewarm. Measure warm water into large, warm bowl. Sprinkle or crumble yeast in water; stir until dissolved. Add lukewarm milk mixture, eggs, nutmeg and half of flour. Beat until smooth. Add raisins and enough additional flour to make a soft dough.

Turn onto a lightly floured board; knead until smooth and elastic, about 10 minutes. Place in greased bowl, turning greased side up. Cover. Let rise in warm place, free from drafts, until double in size, about 1 hour. Punch down. Let rise again until almost doubled in size, about 30 minutes.

Punch down and turn out onto lightly floured board. Divide in half. Cover. Let rest 10 minutes. Shape into 2 loaves; place in greased 9 x 5 x 3-inch pans. Cover. Let rise in warm place, free from drafts, until doubled in bulk, for 45 minutes. Bake in moderate oven at 350° for 40 to 45 minutes or until done.
