Ingredients/Components

  • cinnamon - 1/4 1/2
  • brown sugar - 2 Tbsp
  • egg, slightly beaten - 1 item
  • baking powder - 1 tsp
  • baking soda - 1/2 tsp
  • vegetable oil - 2 Tbsp
  • shredded carrots - 2 c
  • lemon juice - 1 Tbsp
  • skim milk - 3/4 c
  • whole wheat flour - 1 c
  • bran flakes - 1 c

How to make carrot bran muffins:

Combine bran flakes, milk and carrots; let stand 5 minutes. Add remaining ingredients, stirring until particles are moistened. Line each muffin tin with two paper liners; fill half full. Bake in 400° oven for 20 minutes.
