Carrot bran muffins
Ingredients/Components
- cinnamon - 1/4 1/2
- brown sugar - 2 Tbsp
- egg, slightly beaten - 1 item
- baking powder - 1 tsp
- baking soda - 1/2 tsp
- vegetable oil - 2 Tbsp
- shredded carrots - 2 c
- lemon juice - 1 Tbsp
- skim milk - 3/4 c
- whole wheat flour - 1 c
- bran flakes - 1 c
How to make carrot bran muffins:
Combine bran flakes, milk and carrots; let stand 5 minutes. Add remaining ingredients, stirring until particles are moistened. Line each muffin tin with two paper liners; fill half full. Bake in 400° oven for 20 minutes.Recipe categories: Breads, Quick breads, Muffins.
