Ingredients/Components
- dry white wine - 1 c
- bay leaves - 2 item
- carrot, sliced - 1 item
- minced chives - 2 Tbsp
- shallots, chopped - 2 item
- mixed herbs - 4 Tbsp
- large rabbits - 2 item
- mandarin juice - 1 c
- vodka or gin warmed optional - 1 item
- wide strips pork fat - 2 item
- mandarins, sliced, peel and fruit - 2 item
How to make rabbit:
Wrap rabbit in strips of pork fat and put in roasting pan with carrot, mandarin slices, chopped shallots, herbs and white wine. Roast in 350° oven for 1 1/2 hours. After cooking 30 minutes, add mandarin juice. Remove rabbit, discard pork fat, strain sauce, pour over rabbit. Flame with vodka or gin. Serves 6 to 8.Recipe categories: Meat, Wild game, Rabbit.
