Ingredients/Components

  • dry white wine - 1 c
  • bay leaves - 2 item
  • carrot, sliced - 1 item
  • minced chives - 2 Tbsp
  • shallots, chopped - 2 item
  • mixed herbs - 4 Tbsp
  • large rabbits - 2 item
  • mandarin juice - 1 c
  • vodka or gin warmed optional - 1 item
  • wide strips pork fat - 2 item
  • mandarins, sliced, peel and fruit - 2 item

How to make rabbit:

Wrap rabbit in strips of pork fat and put in roasting pan with carrot, mandarin slices, chopped shallots, herbs and white wine. Roast in 350° oven for 1 1/2 hours. After cooking 30 minutes, add mandarin juice. Remove rabbit, discard pork fat, strain sauce, pour over rabbit. Flame with vodka or gin. Serves 6 to 8.
