Pickled mushrooms
Ingredients/Components
- salt - 1 item
- lemon juice - 1/2 Tbsp
- chopped onion - 1/4 c
- dry white wine - 1/2 c
- dash of pepper - 1 item
- chopped parsley - 1 Tbsp
- bay leaves - 2 item
- clove garlic, finely chopped - 1/2 item
- white vinegar - 1/4 c
- olive or salad oil - 1 Tbsp
- dried tarragon leaves - 3/4 tsp
- fresh button mushrooms - 1 lb
How to make pickled mushrooms:
Add 1/2 tablespoon of salt to 3 cups of cold water. Wash mushrooms in this. Drain.Combine remaining ingredients and 1/4 teaspoon salt in large saucepan. Add the mushrooms. Bring to boiling. Reduce heat. Simmer, covered, 8 to 10 minutes, or until mushrooms are tender. Cool.
Refrigerate, covered, in marinade, at least 2 hours or until ready to use. Drain just before serving. Makes about 20.
