Ingredients/Components
- cinnamon - 2 tsp
- milk - 1/4 c
- flour - 4 c
- brown sugar - 2 c
- margarine or butter
- baking powder - 2 tsp
- baking soda - 2 tsp
- pumpkin - 2 c
- shortening - 1 c
- raisins - 1 c
- box confectioners sugar - 1 lb
- nuts pecans - 1 c
How to make pumpkin cookies:
Frosting:1 c. margarine or butter1 c. brown sugar1/4 c. milk1 lb. box confectioners sugar Cream pumpkin, sugar and shortening together. Add flour, baking soda, baking powder and cinnamon. Mix.Add 1 cup raisins and 1 cup pecans. Drop by tablespoon onto a lightly sprayed cookie sheet. Bake at 350° for 20 minutes or until bottom of cookie is lightly brown. Cool completely before frosting.
Frosting: Mix together margarine or butter, brown sugar and milk. Cook about 5 minutes. Cool and add confectioners sugar. Spread on cooled cookies.
