Ingredients/Components

  • cinnamon - 1/2 tsp
  • vanilla - 1 tsp
  • granulated sugar - 1 c
  • milk - 1/4 c
  • salt - 1/2 tsp
  • chopped nuts - 1/2 c
  • flour - 2 c
  • brown sugar - 1/2 c
  • baking powder - 1 tsp
  • baking soda - 1 tsp
  • pumpkin - 1 c
  • egg - 1 item
  • shortening - 3/4 c
  • plus 2 Tbsp - 1 c
  • soft margarine - 1/4 c
  • dates or raisins - 1/2 c
  • Cream together beaten egg, sugar and shortening

How to make pumpkin cookies:

Sift all dry ingredients. Cream together beaten egg, sugar and shortening. Add vanilla and pumpkin last. Then add dates or raisins and nuts. Beat until all blended. (May add up to 1/4 cup extra flour if batter is too moist.) Drop by rounded tablespoonfuls onto lightly greased baking sheet. Bake at 325° until light brown, about 25 minutes. Makes about 4 dozen cookies.Icing:3 Tbsp. margarine1/4 c. milk1/2 c. brown sugar1 c. plus 2 Tbsp. powdered sugar1/2 tsp. vanilla Mix margarine, milk and brown sugar. Bring to a boil. Remove from heat. Cool, then add powdered sugar. Add the vanilla last. This icing may be made ahead of time. Ice the cooled cookies. Add extra sugar if the icing seems too thin.
