Ingredients/Components
- cinnamon - 1/2 tsp
- eggs - 2 item
- vanilla - 1 tsp
- packed brown sugar
- salt - 1 tsp
- baking powder - 3 tsp
- chopped walnuts - 1 c
- sifted flour
- pumpkin pie spice
- oleo - 1/2 c
- lemon juice - 1 tsp
- ground ginger - 1/4 tsp
- grated lemon peel - 1 tsp
- cooked pumpkin - 1 c
How to make pumpkin cookies:
Heat oven to 375°. Grease cookie sheets. Cream oleo and sugar until fluffy. Beat in eggs, one at a time. Stir in pumpkin, vanilla, peel and juice. Sift flour, baking powder, salt and spices together. Add to oleo mixture. Stir in walnuts. Drop by rounded teaspoonfuls on cookie sheet 1-inch apart. Bake 12 to 14 minutes. Cool on wire rack.
