Ingredients/Components
- eggs - 3 item
- sugar - 1 c
- pumpkin - 2/3 c
- lemon juice - 1 tsp
- flour - 3/4 c
- baking powder - 1 tsp
- cinnamon - 2 tsp
- ginger - 1 tsp
- nutmeg - 1/2 tsp
- salt - 1/2 tsp
- nuts - 1 c
- powdered sugar - 1 c
- cream cheese - 8 oz
- butter - 4 Tbsp
- vanilla - 1/2 tsp
How to make pumpkin cake roll:
Beat eggs on high for 5 minutes. Gradually add sugar. Stir in pumpkin and lemon juice. Set aside. Sift together flour, baking powder and spices. Add flour mixture to pumpkin mixture. Pour into 15 x 10 x 1-inch pan greased and floured. Sprinkle with nuts. Bake at 375° for 15 minutes. Sprinkle with powdered sugar. Turn out on towel and roll up. Let cool 1 hour. Beat cream cheese and butter until smooth. Add sugar and vanilla. Beat smooth. Unroll cake and spread filling on and roll cake back up. Wrap in foil and chill or freeze.
