- sugar - 1 c
- cinnamon - 2 tsp
- cream cheese - 2 (3
- eggs - 3 item
- vanilla - 1/2 tsp
- salt - 1/2 tsp
- chopped nuts - 1 c
- flour - 3/4 c
- butter - 1/4 c
- nutmeg - 1/2 tsp
- baking powder - 1 tsp
- pumpkin - 2/3 c
- powdered sugar - 1 c
- ginger - 1 tsp
- lemon juice - 1 tsp
How to make pumpkin roll:
Beat eggs on high 5 minutes. Beat in sugar. Stir in pumpkin and lemon juice. Mix together all dry ingredients and fold into pumpkin mixture. Grease and flour jelly roll pan. Spread mixture onto pan. Sprinkle with nuts. Bake at 375° for 15 minutes. Turn onto towel covered with powdered sugar. Roll in towel. Chill.Mix powdered sugar, cream cheese, butter and vanilla. Unroll from towel and spread with cheese mixture. Reroll, chill and slice!
