Potato soup
Ingredients/Components
- milk
- salt - 1 tsp
- flour - 6 Tbsp
- water - 2 qt
- butter or oleo - 6 Tbsp
- pepper - 1/2 tsp
- carrots - 2 item
- medium potatoes - 6 item
- small onion - 1 item
- celery stalks - 6 item
How to make potato soup:
In large kettle, cook diced potatoes, carrots and celery until tender (about 20 minutes). Drain and reserve liquid.In small pan, saute onion in butter or oleo until set; stir in flour, salt and pepper. Add milk gradually, stirring constantly, until thickened. Add to vegetables in large kettle. Add reserved liquid to soup mixture until desired consistency. Cook until well blended and hot. Makes 2 1/2 quarts.
