How to make potato bread:

Make Early in the Day: In large bowl, combine 1 1/2 cups flour, sugar, salt and yeast. In 2-quart saucepan, stir milk, mashed potatoes and 1/2 cup water until well mixed. Add butter and, over medium heat, heat until very warm (120° to 130°), stirring occasionally. (Butter does not need to melt completely.) With mixer at low speed, gradually pour liquid mixture into dry ingredients. Beat in eggs. Increase speed to medium; beat 2 minutes, occasionally scraping bowl with rubber spatula. Beat in 1 cup flour or enough to make a thick batter; continue beating 2 minutes, occasionally scraping bowl. With spoon, stir in enough additional flour (about 3 1/4 cups) to make a soft dough.

Turn dough onto well floured surface; knead about 10 minutes, until smooth and elastic, working in about 1 1/2 cups flour while kneading (dough will be soft). Shape dough into a ball and place in large greased bowl, turning dough over so that top is greased. Cover with towel; let rise in warm place (80° to 85°) away from draft, until doubled, about 1 1/2 hours. (Dough is doubled when 2 fingers pressed lightly into dough leave a dent.) Punch down dough by pushing down the center of dough with fist, then pushing edges of dough into center. Turn dough onto lightly floured surface; knead lightly. Cover with bowl for 15 minutes; let dough rest.

Grease two 9 x 5-inch loaf pans. Cut dough in half. With lightly floured rolling pin, roll one dough half into 15 x 8-inch rectangle. Starting with the 8-inch end, tightly roll dough jelly roll fashion; pinch seam to seal. Press ends to seal and tuck under; place, seam side down, in loaf pan. Repeat with other dough half. Cover with towel; let rise in warm place until double
