Ingredients/Components

  • lemon juice - 4 tsp
  • egg, lightly beaten - 1 item
  • grated lemon peel - 1 tsp
  • cup sugar - 1/3 item
  • cup milk - 2/3 item
  • 1/4 cups Bisquick baking mix - 2 item
  • cup fresh or frozen blueberries do not thaw - 1 item

How to make lemon blueberry coffee cake:

In a bowl, combine the egg, sugar, lemon peel and milk; mix well. Stir in the biscuit mix just until moistened. Fold in blueberries. Pour into greased 9 inch round baking pan.

Bake at 350 degrees for 25-30 minutes or until toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan. Combine the confectioners sugar and lemon juice until smooth; drizzle over warm cake. Cut into wedges and serve warm.
