- can crushed pineapple, drained - 1 (9
- vanilla wafers or butter cookies - 1/2 lb
How to make pineapple icebox cake:
Grind the wafers or roll them into crumbs and put 1/2 of them in the bottom of your pan. Cream butter and sugar; add eggs, 1 at a time. Beat until smooth and creamy. Pour this mixture over the crumbs. Whip the whipping cream. Add the pineapple and pour over the first mixture.
