- sifted cake flour
- sugar
- baking powder
- baking soda
- salt - 1 tsp
- margarine or butter - 2/3 c
- buttermilk - 2/3 c
- mashed ripe bananas
- unbeaten eggs - 3 item
- sifted powdered sugar
- carton whipping cream - 1 item
How to make banana nut cake:
Icing:2 tsp. sifted powdered sugar1 carton whipping cream Sift together cake flour, sugar, baking powder, baking soda and salt. Cut in margarine or butter. Add 1/3 cup buttermilk and bananas. Beat with a spoon or mix with mixer for 2 minutes. Add other 1/3 cup buttermilk and eggs. Beat 2 more minutes. Bake at 350° for 30 to 35 minutes in two 9-inch round cake pans.For icing, whip whipping cream until it holds a shape. Be careful not to overwhip or you will have a stick of butter in whey! Fold in powdered sugar. Spread on cake. Top with chopped nuts, if desired.
