Ingredients/Components
- sugar - 1 c
- water - 1 c
- vinegar - 1/2 c
- stick cinnamon - 1 item
- fresh beets - 1 lb
How to make pickled beets:
Cook beets in 1-inch boiling, salted water for 30 to 45 minutes. Drain and cool. Peel and quarter beets. Combine water, vinegar, sugar and cinnamon in saucepan. Bring to a boil and pour over beets. Marinate several hours or overnight in refrigerator. Pour off part of liquid before serving. Yields 2 cups.Recipe categories: Appetizers, Condiments, etc., Salads.
